After all the planning, it’s finally time for the most hands-on part of the journey. Completing the fit-out and stocking your truck is the last major hurdle before you can start serving customers. It’s all about turning an empty space into a safe, efficient, and clean professional kitchen.

The Final Fit-Out

This stage involves installing all the equipment and fittings that you've carefully planned. Whether you're doing it yourself or using a specialist conversion company, the goal is to create a workspace that allows you to cook and serve food safely and quickly.

Key installation jobs include:

  • Heavy Equipment: Getting your griddles, fryers, fridges, and freezers professionally installed. It is vital that these are secured so they cannot move during transit.
  • Work Surfaces: Fitting your stainless steel or other food-safe countertops. Ensure they are sealed correctly to prevent dirt from getting trapped in gaps.
  • Plumbing: Connecting your sinks, water heaters, and the all-important fresh and wastewater tanks. Test the system thoroughly to check for any leaks.
  • Electrics & Gas: Ensuring all lighting, sockets, and gas lines are safely installed and tested by qualified professionals. You will need safety certificates for these, so don't cut corners.

Your First Stock-Up: Non-Perishables

With a clean and complete kitchen, you can now start stocking it. The smart way to do this is to begin with all your non-perishable items. This means everything that doesn't need to be refrigerated and has a long shelf life. Fresh ingredients can be bought just before you start trading.
