In the heat of the moment, it's easy to forget a small but crucial step. Did you check the gas connection? Is the card reader fully charged? This is where a checklist becomes your most valuable tool.

Think of it like a pilot's pre-flight check. It’s a professional habit that turns chaos into a calm, repeatable process. Getting your prep and clean-down right, every single time, is the foundation of a successful and safe food truck business. It ensures:

This list covers everything that needs to happen before you open the hatch to your first customer. It’s best to split it into two phases: tasks you do at your prep kitchen or base, and tasks you do once you arrive at your trading pitch.

Part 1: At Your Base

This is about getting everything ready to go. Your goal is to load the truck so that setting up on-site is as quick as possible.

  1. Food Prep: Complete all major prep tasks like chopping vegetables, mixing sauces, and marinating meats.
  2. Stock Check: Count and pack all necessary food items, drinks, and disposables (napkins, boxes, cutlery).
  3. Equipment Check: Make sure all essential tools, from tongs to cleaning cloths, are on the truck.
  4. Fluids & Essentials: Check you have a full water container for handwashing and washing up, and enough cooking oil and gas.
  5. Load the Vehicle: Pack the truck logically, ensuring cold items go straight into fridges and everything is secured for travel.

Part 2: On Arrival at Your Pitch

You’ve arrived. Now it’s time to transform your vehicle into a professional kitchen.

  1. Position & Secure: Park the truck, ensure it's level, and apply the handbrake securely.
  2. Power & Gas: Set up your generator or hook up to mains power. Safely connect the gas bottles and check for leaks.
  3. Kitchen Power-Up: Turn on fridges, freezers, and get griddles, fryers, or ovens up to temperature.
  4. Health & Safety: Check fridge temperatures are correct. Put out your fire extinguisher and first-aid kit in an accessible place.
  5. Service Area Setup: Sanitise all work surfaces. Stock your service hatch with sauces, napkins, and packaging.
  6. Final Touches: Put out your menu board and any A-boards. Turn on the card reader and get your cash float ready.

How to build your post-service clean-down checklist

The end of a long day is when you’re most likely to cut corners. This checklist ensures you leave everything spotless, safe, and legally compliant.

Part 1: Food & Surfaces

  1. Store Food Safely: Allow hot food to cool before refrigerating. Label and date everything correctly to comply with food safety rules.
  2. Empty & Clean Bain-Maries: Never leave food in a bain-marie overnight. Empty, wash, and sanitise the containers.
  3. Wipe Down Surfaces: Clean and sanitise all food preparation and service counters.

Part 2: Equipment, Waste & Floors

  1. Deep Clean Equipment: Thoroughly clean the grill, fryer, and any other cooking appliances. This is much easier when they are still warm.
  2. Wash Up: Wash all utensils, pots, and pans.
  3. Manage Waste: Bag all general rubbish and recycling. Securely store used cooking oil and grey water from the sink for proper disposal at a licensed facility.
  4. Clean Floors: Sweep and mop the floor of the truck.

Part 3: Final Security Checks

  1. Power Down: Turn off all electrical equipment at the appliance and the main switch.
  2. Gas Off: Shut down all gas appliances and, crucially, turn the gas off at the bottle.
  3. Cash Up: Count your takings and secure the cash and card machine.
  4. Lock Up: Securely lock all windows, hatches, doors, and the tow hitch if you have a trailer.
A top tip: Laminate your checklists and stick them to the inside of a cupboard door. Use a dry-wipe marker to tick things off each day.
