To turn new staff into confident, valuable members of your team, you need a structured training plan. Don't just show them the coffee machine and hope for the best. A consistent training programme ensures every customer gets the same high-quality coffee and service, which is the secret to building a great reputation and keeping people coming back.

Your Training Checklist

A comprehensive training plan covers more than just making drinks. Break your training into four key areas to ensure everything is covered.

  1. Barista Skills & Workflow: This is the hands-on part. Show them the entire process from start to finish, not just the individual steps. Your workflow should be a repeatable sequence:
    • Grinding the beans and 'dialling in' the grinder for the perfect espresso shot.
    • Correct tamping technique (not too hard, not too soft).
    • Pulling the shot and watching for the right colour and timing.
    • Steaming milk to the right temperature and texture for different drinks (e.g., a flat white vs. a cappuccino).
    • Basic latte art and drink presentation.
    • Crucially, how to clean the machine at the end of the day.
  2. Menu & Product Knowledge: Your staff are your salespeople. They need to know every item on the menu inside-out.
    • Provide exact recipes for every single drink and food item you sell.
    • Explain the flavour profiles of your coffee beans or any guest blends.
    • Ensure they know all ingredients, which is vital for handling customer questions about allergens.
  3. Customer Service Standards: This is where you define the 'feel' of your café. Explain your expectations for how staff should interact with customers at every step.
    • The Welcome: How to greet someone the moment they walk in.
    • The Order: How to take an order efficiently and politely, and how to use the till system.
    • The Handoff: How to call out the drink and serve the customer with a smile.
    • The Farewell: The importance of a friendly "goodbye" or "thank you".
  4. Health, Safety & Procedures: Cover the essential rules that keep your staff and customers safe and your business running smoothly. This includes your daily opening and closing checklists, food hygiene basics, how to handle cleaning chemicals safely, and what to do in case of a complaint or emergency.
Top Tip: Create a simple training manual. It doesn’t need to be fancy; a folder with printed sheets containing your recipes, checklists, and service standards is a powerful tool. It gives staff something to refer back to and ensures everyone is trained the same way, even when you're not there.
